Vegan Tater Tot Casserole
2 cups plain soy milk
¼ cup nutritional yeast
¼ cup garbanzo bean flour - I use Bob'sRed Mill
¼ tsp tumeric
4 Boca Vegan Burger patties
½ bag of Daiya cheddar cheese shreds
½ bag of frozen mixed veggies
1 bag of tater tots
Combine soy milk, nutritional yeast, garbanzo bean flour and turmeric in a bowl. Mix until blended.
Cook Boca patties in microwave for 2 mins. Chop into bite sized pieces.
Spray pan with nonstick oil.
Layer chopped Boca patties in pan.
Pour frozen veggies over Boca patties.
Put cheese shreds on top.
Pour soy milk mixture on top of everything.
Layer tater tots on top.
Cook in oven at 400 degrees for about 45 minutes until tater tots are golden brown.
