Steamed sweet potato cake - vegan and gluten free


1 ½ cup coconut milk
1 ½ cup powdered sugar
1 cup brown rice flour
4 TBSP baking powder
2 medium sweet potatoes cooked and peeled

In a bowl mash the sweet potatoes
Stir in sugar and ½ cup coconut milk
Blend well and add in rice flour + ½ cup coconut milk
Stir in baking soda + ½ cup coconut milk

Grease 2 pie pans
Fill pie pans evenly with fluffy mixture

Steam on stove in a steamer for 1 hour
