Homemade vegan "refried" beans were used.
Each your heart out Taco Bell!
3 cups cooked pinto beans
1 cup salsa verde
2 TBSP chili powder
In a bowl mash beans with potato masher with salsa and chili powder. Add more salsa if you want thinner beans or less if you want thicker beans.
Soft corn tortillas
1 bag of Daiya cheese shreds of your choice (I used mozzarella)
1 cup fresh diced tomatoes
Salsa of your choice
After you make the refried beans spread a generous helping on each tortilla round.
Top each with Daiya cheese.
Bake in oven at 400 degrees for about 10 mins until the cheese melts.
Once out of the oven top with fresh tomato and salsa.
