Chopped fruit oatmeal cookies (vegan)



Ingredients needed –
2 ripe bananas
1 medium sized ripe avocado
1 tsp vanilla extract
½ cup garbanzo bean flour
½ cup 10 grain cereal
½ cup quick oats
1 cup chopped mixed dried fruit
1TBSP baking powder
1 tsp brown rice syrup
½ cup coconut palm sugar
2 cups brown rice flour
½ cup flax milk (or any milk substitute)

Directions –
In a mixing bowl smash the ripe bananas and avocado into a mushy paste. Stir in vanilla extract.  Stir in brown rice syrup. Mix well.
Stir in garbanzo bean flour, 10 grain cereal and quick oats.
Blend in the baking powder.
Add the remaining ingredients to the mixture and blend evenly.
Preheat oven to 350 degrees.
Grease cookie sheets.
Using a tablespoon scoop cookie mixture onto the sheet and space evenly.
This should be enough to make 18 uniform sized cookies.
Bake in the oven for 25 minutes.
Take out and let cool.
