Vegan Ube Donuts with chocolate walnut filling




1 medium ube (purple sweet potato) 
1 TBSP Earth Balance Spread
1 1/3 cups sweet rice flour (mochi flour) 
3/4 cup coconut milk
2 TBSP sucant or substitute brown sugar
Filling - 
1 TBSP Cocoa powder 
1/2 cup crushed walnuts
2 TBSP sucant or substitute brown sugar
1/3 cup maple syrup

Clean, peel and steam sweet potato until soft. If you can't find ube you can substitute with a regular sweet potato or yam. 
Once cooked, mash the sweet potato in a bowl and mix with Earth Balance Spread. 
Mix in sugar and try to whip the sweet potato to a light fluffy mixture. 
Add in the mochi flour. Blend. Add in the coconut milk. Blend. 
Set oven to 400 degrees. 
Grease donut pan. 
Sppon in mixture to donut pan. 
Cook for about 20-25 minutes until golden brown. 
Set aside to cool. 
In a separate bowl mix in cocoa powder, walnuts, sugar and maple syrup. 
Spoon the filling into the center of the donut or spread on top.

Mary, these look amazing. will have to go collect some ingredients and give these a whirl. where does one get a donut pan? i thought them critters were fried?
