Millet Broccoli Au Gratin - It's cheesy!



2 cups cooked millet

3 cups chopped broccoli (chopped in a food processor)

¼ cup chia seeds

2 cups fat free half and half

4 – 6 slices of your favorite cheese (for this recipe I used Colby Jack)

1 cup of your favorite shredded cheese (I used fresh shredded parmesan)

½ stick of butter

Preheat oven to 350 degrees.

Spray baking dish with oil.

In a bowl combine millet, broccoli and chia seeds – mix well.

In a saucepan on the stove bring to a low simmer the half and half with butter. Slowly put in the cheese slices and stir until melted.

Pour dry mixture of millet into a baking dish. Pour the hot mixture evenly over the millet.

Top with shredded cheese.

Bake in the oven for about 30 mins until the top is golden brown.
