Vegan sukiyaki noodles




Sukiyaki broth - 2 cups vegetable broth, 1 cup water, 1/4 cup soy sauce, 1 TBSP sugar and 1 tsp grated ginger. 

Veggies - add as little or as much as you want. 
For this recipe I used sliced red onion, bean sprouts, cilantro, sliced celery, sliced shitake mushrooms. 
If you can not find fresh mushrooms feel free to use dehydrated mushrooms. 

Noodle - I used Jap Che which is a Korean sweet potato noodle. 

In a pot simmer all the ingredients for the broth. 
Bring to a low boil. 
Add veggies. 
Simmer for about 5-7 mins on a low boil. 
Add in the Jap Che noodles and cook at a low boil for 10 minutes until noodles become absorbent and clear. 

Garnish with kimchi.
