Breakfast casserole



Grease a baking pan. 
Preheat oven to 450 degrees. 
Cut 4 corn tortillas into strips. 
Line the bottom of the pan. 
Add 2 cups frozen shredded hash brown potatoes. 
Layer on top 1 cup frozen black eyed peas and 1 cup frozen chopped collard greens. 
Spoon on top 2 cups of salsa and 1 cup of tomato sauce. 
Bake uncovered for about 40 minutes. 

Ideas to make the casserole your own: 
Top with cheese
Add crumbled sausage or even bacon bits
Add in beaten eggs 


Breakfast casserole served with goat cheese and cilantro.
Sides - cooked beets, straw berry and avocado slices.
