No dairy, eggs, gluten or added sugar muffins. Paleo? I have no idea but they are delicious!
3 medium carrots shredded
3 ripe bananas mashed
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 cup chopped dried fruit
1/2 cup vegan chocolate chips (Whole Foods brand)
1/2 cup cashews
1 teaspoon baking powder
3 tablespoons coconut flour
1/3 cup coconut milk
Mash bananas and fold in shredded carrots.
Mix in vanilla and cinnamon.
Blend well.
Add in dried fruit, chocolate chips and cashews.
Mixture will be a bit wet.
Fold in baking powder.
Fold in coconut flour.
Add the coconut milk.
Blend as evenly as possible.
The mixture should be thick like a cookie dough.
Preheat oven to 375 degrees.
Scoop mixture into muffin cups and pack it in as evenly as you can.
Cook in the oven at 375 degrees for about 40 mins until the tops turn golden brown.
