2 cups cooked brown rice pasta
1 Tablespoon coconut oil
2 carrots sliced
1/2 onion sliced
1 cup diced white mushrooms
1/2 cup sliced shitake mushrooms
3 cups Zen Blend greens from Earthbound Farms
1 cup chopped cilantro
1/2 teaspoon cumin
2 teaspoons red pepper flakes
1/4 cup coconut aminos (soy sauce substitute)
Stir fry veggies in coconut oil.
Add in cooked pasta
Stir
Add in chopped cilantro
Stir
Mix coconut aminos, red pepper flakes and cumin in a bowl.
Pour mixture over pasta and veggies.
Stir evenly.
