Wheat free vegan griddle cakes


1 large ripe banana
1 Tablespoon flax meal 
3 Tablespoons tapioca flour
2 Tablespoons coconut flour 
1 Tablespoon baking powder 
1/2 cup coconut milk 
1 small apple cut into thin slices 
Vegan butter substitute as needed 

Mash the banana in a mixing bowl. Mix in the flax meal. 
Stir in the tapioca flour, coconut flour and baking powder. 
Add in the coconut milk and blend. 


Grease a griddle with vegan butter substitute. 
Scoop mixture onto the griddle like you are making pancakes. 
Place apple slices on top of the mixture. 
Cook until brown and flip.
