Garlicky beets & beet greens - vegan recipe


Garlic sauce - 
1 head of garlic peeled
1 lemon 
1 TBSP sesame seed oil 
2 TBSP rice wine vinegar 
Put all the ingredients in a food processor and blend until you get a paste. Set aside. 

Wash one bunch of beets. 

Peel beets. Wrap them in foil. Roast beets in oven for 45 minutes at 400 degrees. 

Clean and trim beet greens. 
Bring a pot of water to boil. 
Blanche greens, drain and set aside. 

In a frying pan saute garlic paste. 
Add in beet greens. 
Cook for about 5 minutes incorporating the garlic paste into the greens. 
Add in roasted beets cut into cubes. 
Dish can be eaten warm or served chilled as a side salad.
