Mushrooms w/ quinoa, broccoli, walnut and cilantro stuffing


1 cup cooked quinoa
In a food processor blend 1/2 cup walnuts, 1 cup chopped broccoli, 1/2 cup chopped cilantro & 1/4 cup olive oil into a paste. 
Add the paste into the cooked quinoa and blend evenly. 

Stuff cleaned mushroom caps with the mixture. 
You can add shredded cheese of your choice on top. 

Bake in the oven at 350 degrees for 10 minutes.
