1 cup cake mix (preferably vanilla) 
1 small container coconut yogurt 
2 TBSP ube (purple sweet potato jam) 
Mix all of the ingredients into a bowl until the lumps are gone. 
Scoop into cupcake liners 
Sprinkle shredded coconut on top. 
Preheat oven to 350 degrees. 
Cook for 30 -35 minutes.
