Sweet potato burgers


I had a bit of left over baked sweet potatoes and rice so made them into patties. 
2 medium cooked sweet potatoes 
1 cup of broken jasmine rice 
1/2 cup chopped green onion 
1 cup of frozen corn 

Mash it all up in a bowl. 
I have this contraption to make eggs perfectly shaped. I used it to form the mixture into even patties. 
Bake in the oven at 400 degrees for 20 minutes. 
You can freeze the patties and reheat just like a veggie burger.
