Sweet potato oatmeal chocolate chip cookies - vegan



2 cups of oatmeal
1 large mashed banana 
1 large mashed cooked sweet potato
1 cup chocolate chips

Mash the sweet potato and banana in a mixing bowl. Add in oatmeal and chocolate chips. 

In a separate bowl mix 1 tsp baking powder, 1/2 cup of garbanzo bean flour, pinch of salt and a dash of cinnamon. 

Stir the dry mixture into the wet mixture. Add 2 TBSP coconut milk. Mix together. 

Preheat oven to 325 degrees. 

Grease cookie sheets. 

Spoon mixture to cookie sheets. 
Bake for 20-25 minutes.
