Brown rice & lentil stuffed peppers - vegan recipe


1 cup of cooked brown rice
2 cups of cooked red lentils
1 cup of pasta sauce 
2 cups of arugula
1/3 cup of nutritional yeast
Mix until blended. 


Wash 3 bell peppers.
Cut in half and core. 


Stuff the rice and lentil mixture into each pepper half. 
Cook in the oven at 375 degrees for 40 minutes.
