Eggless breakfast scramble


In a skillet warm up fresh tortilla strips (soft corn preferably non-GMO) until golden brown. 
Add in 1/2 cup each sliced cherry tomatoes, cooked potato wedges, sliced carrots, chopped green onion, tomato sauce and brown. 
Add in 2 cups of fresh spinach. Stir it all together. 
Top with feta cheese.
