No wheat, no added sugar high protein griddle cakes and muffins





1 cup of coconut flour
1 TBSP baking powder
1/4 cup of chia seeds
1 large ripe banana
1/2 cup protein powder (I used Spirutein) 
1 1/2 cup coconut milk 
1 large egg

Mash the banana in a mixing bowl. 
Add in the egg. 
Stir. 
Add dry ingredients.
Pour in coconut milk and blend well. 



For griddle cakes cook as you would pancakes on a non stick skillet. 
Serve griddle cakes with organic butter and maple syrup. 

For muffins preheat oven to 350 degrees. 
Scoop mixture into muffin pan lined with baking cups. 
Cook for 30 minutes.
