Oven toasted omelet with fresh veggies


In a non stick skillet saute fresh veggies of your choice. 
I used chopped onions, broccoli, crimini mushrooms and arugula. 
Once the veggies brown mix in scrambled eggs. 
Cook about 1/2 way through and put the mixture on a greased cooking sheet. 
Top the eggs with chunks of cheese - I used gouda. 
Cook for about 10 minutes at 350 degrees until the cheese melts. 
I topped the eggs with chopped tomato and cilantro with Sriracha sauce.
