Crock pot curry coconut soup - vegan recipe


Throw in the crock pot - 
4 cups veggie broth 
2 cups coconut milk 
1/3 cup curry paste 


(I used Aroy-D. If you can't find that A Taste of Thai makes a good red curry paste too.) 
Add in frozen veggies - 
I used Costco Stir Fry veggie blend, frozen sweet potato cubes, frozen taro slices, Trader Joe's frozen kale, frozen shelled soy beans, & peas.
Set the crock pot on low and cook for at least 6 hours.
