Purple sweet potato in coconut milk


Peel and slice 1 large purple sweet potato. 
Simmer 1 cup of coconut milk in a saucepan. 
Add the sweet potato slices. 
Cook on a low simmer for about 20 minutes stirring occasionally. 
Scoop potatoes into a bowl & top with cashews & a bit of maple syrup for extra sweetness.
