Sweet potato, carrot & coconut baked bars - vegan (soy, egg and dairy free)


1 large ripe banana
1 cup mashed white sweet potato (or use orange sweet potato) 
1/2 cup unsweetened shredded coconut
1 cup diced carrots
1/2 cup chopped nuts (I used walnuts and pecans) 
1/2 cup vegan chocolate chips (Whole Foods brand) 
1/2 cup almond milk 

In a large bowl mash the banana. Add in the sweet potato. Blend well. Add in the almond milk. 
Blend until you get a smooth texture. 
Mix in the coconut, nuts and chocolate chips. 
Blend evenly. 



Preheat the oven to 350 degrees. 
Grease a baking dish. 
Using a spatula spread the mixture as evenly as possible. 
Bake for 1 hour. 
Take out, set aside to cool and cut into bars.
