A friend needed some ideas for GF muffins. This is what I came up with. It's a basic GF muffin base and 10 mix in ideas. Happy baking.
Basic GF dairy free muffin base.
1 1/3 cup GF flour
1/3 cup tapioca starch
2 teaspoons of baking powder
3/4 teaspoon of salt
1 large rip banana
1 cup coconut sugar (sucant and brown sugar can be used as a substitute)
1/2 cup applesauce
1/2 cup coconut milk (or any other non dairy milk)
2 teaspoons vanilla extract
2 Tablespoons of maple syrup
Sift the flour into a large mixing bowl; add the tapioca starch, baking powder, ¾ teaspoon salt. Whisk to combine.
In another bowl mash the banana. Add the sugar, oil, non dairy milk, applesauce, vanilla & maple syrup. Whisk to combine the ingredients.
Add the liquid ingredients to the flour mixture and fold in.
Preheat oven to 375 degrees.
Bake for 25 minutes. Makes 12 regular sized muffins.
MIX IN IDEAS -
1) Carrot walnut muffins - add 2 cups shredded carrots and 1/2 cup walnuts to the muffin base mixture.
2) Blueberries - add 1 cup frozen or 2 cups fresh blueberries to muffin base mixture.
3) Health nut - 1/4 cup flax meal, 1/4 cup Chia seeds, 1/4 sliced almonds & 1/4 cup sesame seeds added to muffin base mixture.
4) Nutty coconut - 1/2 cup shredded coconut, 1/2 cup chopped walnuts, 1/2 cup cashew pieces added to muffin base mixture.
5) Pinapple mango - 1 cup drained diced pineapple (from the can) and 1 cup defrosted frozen mango chunks added to the muffin base mixture.
6) Apple cinnamon - 1 cup diced apples and 1 teaspoon cinnamon added to muffin base mixture.
7) No dye red velvet - 1/2 cup beet puree (or substitute 1/3 cup beet juice) and 3 tablespoons cocoa powder added to the muffin base mixture.
8) Cranberry pecan - 1 cup dried cranberries and 1/2 cup pecan pieces added to the muffin base mixture.
9) Zucchini - 1 1/2 cups shredded zucchini added to the muffin base mixture.
10) Chocolate chips - 1 cup (or more if you like) added to the muffin base mixture.
