Baked sweet potato bars - vegan



2 medium sized ripe bananas
2 medium sized sweet potatoes - previously steamed
1 cup of rolled oats (I used Bob's Red Mill Gluten free oats) 
1 small cup (6 oz) So Delicious Coconut yogurt 
1/2 cup coconut shreds 
1/2 cup chopped walnuts 
1/2 cup raisins

In a mixing bowl mash the bananas. Add in the oats. Blend well. 
Grease a medium sized baking dish. 
Spread the oats & bananas mixture evenly along the bottom. 


In a separate bowl, mash the sweet potatoes. Blend in the yogurt, coconut, walnuts and raisins. 
Spread evenly on top of the oats. 


Bake it in the oven at 350 degrees for 40-45 minutes. 
Cut into squares to serve.
