Shredded daikon & carrot salad (vegan recipe)


In a large bowl mix together - 
1 cup shredded carrots
2 cups shredded daikon
1/2 cup chopped cilantro 
1 piece of ginger the size of your thumb peeled and shredded 
1 TBSP red pepper flakes
1 tsp white sesame seeds
1 lime - juiced
1 TBSP sesame seed oil 
2 TBSP white rice vinegar

After mixing all of the ingredients in a bowl I like to put the salad in a mason jar and give it a few good shakes with the lid on. Chill it in the refrigerator for at least 2 hours. I like to chill it over night before eating. 
It's good as a side condiment or alone over warm rice.
