Shiitake mushroom soup


Simmer on the stove for 30 minutes over medium low heat - 

3 cups of veggie broth 
1 cup sliced shiitake mushrooms
1 cup thinly sliced napa cabbage
1 cup baby spinach
1/2 cup diced cilantro 
1/2 cup thinly sliced onion 
1 cup of watercress 

(The red in the photo is a generous helping of Sriracha sauce)
