Mushroom ramen - vegan recipe


Broth - 
2 cups mushroom broth ( I used Pacific brand) 
1 tsp miso paste 
1 tsp fermented chili pepper paste 
1 tsp crushed fresh garlic
1/4 cup diced green onion

Noodles - 
I used Green Noodle
and cooked per instructions. 

In a small wok heat to a rolling boil - 
broth, miso paste, red pepper paste, garlic & green onion

Add in bean sprouts, chopped bok choy, shiitake mushroom caps & cilantro. 

Boil on medium 5-7 minutes until veggies cook. 

Pour the soup on top of the cooked noodles. 

I added fresh jalapeno pepper slices for an extra kick.
