Matcha mochi cake



2 cups mochiko rice flour 
1 egg 
1 tsp vanilla extract 
1 cup of cane sugar 
8 oz almond milk 
1 TBSP yeast 
1 TBSP baking powder 
1/3 cup of butter (cut into small cubes) 
1 1/2 TBSP matcha powder 
1 tsp sea salt 

I don’t have one of those fancy electric mixers so I just mixed all of the ingredients for 20 minutes in my bread machine on the dough option. 

Preheat the oven to 350 degrees. 
Grease a baking dish. 
Pour in the creamed mixture. 
Bake for 35 minutes until the top is golden brown. It should feel spongey when you press into it gently with your finger. 

Garnish the slices with fresh fruit & shredded coconut.
