Chocolate & protein powder drop cookies - wheat free

 
2 eggs
4 tablespoons brown sugar
4 tablespoons of sucant (or substitute with regular sugar)
1 stick of butter
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup of trail mix
2 tablespoons of protein powder (I used Spirutein)
2 tablespoons Dutch cocoa powder
1/2 cup of coconut flour
1 tablespoon tapioca starch
1 tablespoon baking powder
 
Soften the butter in the microwave.
Cream the eggs, brown sugar, sucant, salt and cinnamon in large mixing bowl.
Stir in the trail mix.
Add the cocoa powder, protein powder, coconut flour and blend well.
The mixture will be thick.
Stir in the tapioca starch and baking powder.
 
Grease a cookie sheet.
Using a tablespoon drop one spoonful onto the cookie sheet and space evenly.
Bake in the oven at 350 degrees for 25 minutes.
